Ceviche
The seafood prepared with Ceviche is just marvellous because all the dishes are made of fresh products that are easily found in this region of the Mexican Pacific.
Aguachile
Some people say that the best aguachiles are found in Puerto Vallarta, therefore, the amount and variety of places to enjoy this fresh and spicy dish are countless.
Camaron embarazado
The name comes from a mixture of Spanish words “ vara= stick and asado: grilled” , unless in Spanish sounds funny. This snack is about pieces of fish or shrimps that are stuck into a wooden stick, seasoned with lime and Huichol Sauce if you fancy.

Shrimp Pozole
The “pozole” is a famous Mexican dish made of nixtamal maize . This dish also comes with it plus dried shrimps, small shrimps, spices, guajillo and ancho chili, topped with fresh shredded lettuce, sliced radish, diced onions and a dash of lime.
Shaken grill fish
It could be one of the simplest dishes but having one in Puerto Vallarta gives it a special flavor. People are used to marinate it with huichol sauce to make it finger-licking good.

Eating snacks or a dessert as you are walking on the beach or street is classic. Street food stands, wheeled stands or even established restaurants offer delicious coconut water and its pulp seasoned with chili, lemon and salt is just great.
